Ingredients
1tspvegetable shortening
2cupsall purpose flour
¾cupwhite sugar
¾cupvegetable oil
2eggs
2tspvanilla extract
1tspbaking soda
1tspground cinnamon
1dashsalt
21ozcherry pie filling,(1 can)
6ozsemisweet chocolate chips,(1 pkg)
1cupwalnuts,chopped
2tspconfectioner’s sugar,for dusting
Preparation
Preheat the oven to 350 degrees F. Thoroughly grease a 9-inch Bundt® pan with shortening, then dust with flour. Shake off any excess flour from the pan.
In a bowl, mix together the flour, sugar, vegetable oil, eggs, vanilla extract, baking soda, cinnamon, and salt, until thoroughly combined.
Gently mix in the cherry pie filling, chocolate chips, and nuts, then scrape the batter into the prepared pan.
Bake in the oven for about 1 hour until a toothpick inserted into the center of the cake comes out with moist crumbs.
Allow to cool for 10 minutes, then invert pan and remove cake. Allow the cake to finish cooling on a rack, then sprinkle lightly with confectioners’ sugar.
