Ingredients

2qtwater
1onion
2stalkcelery with leaves
2tbspfresh flat leaf parsley,chopped
½green pepper
½cupwhole barley
½cuplima beans,small dried
1carrot
1lbmushrooms
2tspsalt
2tbspfresh dill,snipped
Preparation
In a large saucepan combine the tomatoes, juice, water, onion, celery, parsley, green pepper, barley, and lima beans. Bring to a boil.
Simmer, covered, for 1½ hours. Add the carrot, mushrooms, salt, and dill.
Continue simmering for about 20 minutes until the carrot is tender. Correct the seasonings and sprinkle on additional dill, if desired.
