Ingredients
⅔cupsugar
½cupunsweetened cocoa
2tbsplight butter,such as Smart Balance
½cupfat free milk
2½cupsquick oats
¾cuplow fat peanut butter
1tspvanilla
powdered sugar,or cocoa powder, optional
Preparation
Combine the sugar, cocoa, butter, and milk and boil in a small saucepan for 2 minutes.
Remove from heat and mix in oatmeal, peanut butter, and vanilla.
Drop by tablespoons onto a wax paper or roll into balls with slightly moist hands and refrigerate overnight.
The next day you can roll them in powdered sugar or cocoa powder if desired.
