Ingredients

1¾cupall purpose flour

1tspbaking soda

½tspsalt

1cupunsalted butter,softened

1¼cupslight brown sugar,packed

½cupgranulated sugar

2large eggs

2tbspmilk

1½tspvanilla extract

¼tspcoconut extract,or ½ tsp for more coconut flavor

3cupsrolled oats,old fashioned

12ozdark chocolate,chopped into small chunks

1⅓cupscoconut,shredded

1cupalmonds,unsalted, chopped

Preparation

Preheat the oven to 350 degrees F.

In a mixing bowl, whisk together the flour, baking soda and salt for 20 seconds, then set aside.

In the bowl of an electric stand mixer, fitted with the paddle attachment, cream together the butter, brown sugar, and granulated sugar until well blended, not pale and fluffy, just until creamy.

Mix in the eggs one at a time. Stir in the milk, vanilla and coconut extract.

Blend in the dry ingredients, then blend in the oats. Mix in chocolate chunks, coconut, and almonds.

Shape dough into medium size balls, then transfer to parchment paper or Silpat lined baking sheets, spacing each 2-inches apart.

Bake in the oven for 11 to 13 minutes.

Allow to cool on baking sheet for several minutes, then transfer to a wire rack to cool.
