Ingredients
6¼cupswater
1cupchicken broth,condensed
2lbsdried pinto beans
5garlic cloves,chopped
½red onion,chopped
1tbspred pepper flakes,or to taste
salt,or to taste
8ozmozzarella cheese,shredded
16ozpico de gallo,1 container
Preparation
Combine the water, condensed chicken broth, beans, garlic, onion, and crushed red pepper flakes into a large saucepan, and season to taste with salt and pepper.
Bring to a simmer, then cover.
Cook, stirring occasionally, for 3½ hours until the beans are soft.
Mash the cooked beans with a potato masher to desired consistency.
Stir in mozzarella and pico de gallo, serve, and enjoy!
