Ingredients

½cupsultana raisins,chopped

¼cupdried apricots,chopped

1tbsporange zest

2tbsporange juice

3tbspbutter,softened

½cupwhite sugar

1egg

2cupsself-rising flour

¾cupmilk

Preparation

Preheat oven to 350 degrees F. Lightly grease a 9×5 inch loaf pan. In a small bowl, combine sultanas, apricots, orange rind, and orange juice. Let stand for 10 minutes.

In a large bowl, cream butter and sugar together. Beat in egg. Stir in fruit. Stir in flour alternately with milk. Pour batter into prepared pan.

Bake in preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
