Ingredients
2lbsred potatoes,cut into 1-inch pieces
2tbspolive oil
½cupparmesan cheese,grated
3garlic cloves,minced
1tbspItalian seasoning
¼tspsalt
¼tsppepper
parsley,chopped, for garnish
parmesan cheese,freshly grated
Preparation
In a large bowl, add red potatoes, olive oil, parmesan cheese, garlic, Italian seasoning, and salt and pepper. Toss until coated.
On a sheet of aluminum foil, add the potatoes. Fold in the sides to create a foil pack.
Place on the grill on medium high heat and grill for 20 to 30 minutes or until tender.
Garnish with chopped parsley and freshly grated parmesan cheese.
