Ingredients
4chicken breasts,boneless skinless
½cupparmesan cheese,grated
2tsppaprika
¼cupall purpose flour
1tspsalt
¼tsppepper
½tspgarlic powder
2eggs,beaten
¼cupbutter,melted
1cupbroccoli,chopped
1cupred bell pepper,and yellow, chopped
1cupbaby red potatoes,chopped
1tbspolive oil
Preparation
Preheat the oven to 400 degrees F. Spray a 9×12-inch pan with cooking spray.
Combine the parmesan, paprika, flour, salt, pepper, and garlic powder in a bowl. Whisk together the eggs in a separate bowl.
Dip the chicken in the egg and dredge in the flour mixture. Place in the baking dish.
In a large bowl, add the chopped vegetables. Toss with olive oil and salt and pepper. Place in the baking dish surrounding the chicken.
Bake for 40 to 45 minutes or until the chicken is brown and cooked to 160 degrees F.
