Ingredients

3lbsred potatoes,quartered, not peeled

2tbspolive oil

3tbspbasil pesto

½tspkosher salt

⅛tspcracked black pepper

⅓cupparmesan cheese,fresh, shredded

Parmesan Cheese,shaved, for garnish, optional

parsley,chopped, for garnish, optional

Preparation

Preheat the oven to 400 degrees F.

In a large bowl, toss together the oil, basil pesto, Kosher salt, black pepper, and shredded Parmesan Cheese. Mix in the potatoes.

Spread the potatoes onto a baking sheet, then cook for 30 to 35 minutes or until browned.

Remove from the oven, then sprinkle over some shaved Parmesan cheese and parsley.

Serve warm, and enjoy!
