Ingredients

4 medium fresh peaches, peeled

½ cup buttermilk

¼ cup lemon juice

lemon rind, grated

1 pinch salt

Preparation

Remove pits and mash peeled peaches with fork until light and fluffy.

At the same time, work in lemon juice and grated rind.

Add buttermilk and salt, then pour into ice-cube tray and set in freezer.

When mixture is frozen almost solid, whip until very light.

Return to ice-cube tray and freeze until set.

Release from the mold and serve immediately.
