Ingredients

½cupolive oil

⅓cupfresh cranberries

1tsporange zestdivided

2tbsporange juicefresh

1tbsphoney

1tbspgranulated sugar

2tspDijon mustard

½tspsalt

5ozbaby spinach

2bartlett pearssemi-firm but ripe, cored and sliced

¾cuppomegranate arilsor ½ cup dried cranberries

¾cuppecanschopped

⅓cupgoat cheesecrumbled (optional)

Preparation

Add all of the vinaigrette ingredients to a food processor, starting with 1/2 teaspoon of orange zest, adding more to taste as you go.

Pulse until the cranberries have been pureed into the dressing.

Transfer to a jar, then cover and chill until ready to use.

Layer salad ingredients into a bowl. Drizzle desired amount of dressing over the top.

Serve immediately and enjoy!
