Ingredients
½cupvanilla yogurt
1egg
1⅓cupsbananas,(3 medium bananas), mashed
3tbspvegetable oil
1⅓cupflour
½cupsugar
1tspbaking soda
¼tspsalt
½cuppecans,chopped
½cupcoconut,shredded
3tbspflour
3tbspbrown sugar
2tbspbutter
2tbspcoconut
2tbsppecans
Preparation
Preheat the oven to 350 degrees F. Grease a 9×5-inch loaf pan.
In a large bowl, combine the flour, sugar, baking soda, salt, pecans, and coconut.
In a separate bowl, combine the yogurt, egg, oil, and bananas.
Add to the flour mixture, then stir just until moistened. Do not overmix.
Pour the batter into the prepared pan.
Combine the flour, brown sugar, butter, coconut, and pecans until crumbly.
Sprinkle the topping over the batter.
Bake for 55 to 65 minutes, or until a toothpick comes out clean.
