Ingredients

20oz93% lean ground turkey

1small onion,minced

2garlic cloves,minced

¼cupfresh parsley,chopped

2tbspbread crumbs

¼tspallspice

¼tspcoriander

¼tsppaprika

¼tspchili powder

salt and fresh pepper,to taste

Preparation

In a large bowl, combine the ground turkey, onion, garlic, parsley, breadcrumbs, spices, salt, and pepper until evenly blended.

Divide the meat into heaping ¼ cup portions to get 12 pieces rolled into log-shaped ovals.

Place the logs on a cookie sheet, then refrigerate for at least 30 minutes.

If using wooden skewers, soak them in water for at least 30 minutes before grilling.

Preheat grill to high heat.

Carefully insert the skewer through the formed meat.

Grill for 15 minutes covered over indirect heat. Finish over a low flame for 3 to 4 minutes on each side, turning occasionally, until meat is no longer pink.
