Ingredients
3tbspbutter
½tspfreshly ground black pepper,or more to taste
1medium onion,chopped
1tspsalt
1garlic clove,or more to taste, minced
1lblean ground beef
31ozlight red kidney beans,(2 cans), undrained
15.25ozsweet corn,(1 can), undrained
15ozgreen beans,(1 can), drained
Preparation
Melt the butter in a large skillet over medium heat. Simmer for 5 to 10 minutes, stirring frequently, until butter is browned, fragrant, and foamy, with brown bits in it.
Add the pepper and stir for about 10 seconds. Immediately stir in the chopped onion to prevent the butter from burning.
Add the salt and sauté for about 5 minutes, stirring occasionally, until onion is translucent. Add the garlic and cook for about 1 minute until fragrant.
Add the ground beef. Cook and stir for 5 to 7 minutes until beef is browned and crumbly.
Add undrained kidney beans and undrained corn. Mix and bring the liquid to a boil.
Reduce heat and simmer for 20 to 30 minutes until liquid cooks down into a sauce that just coats the back of a spoon. Add drained beans during the last 5 minutes. Taste and add more salt or pepper, as desired.
Stir well and ladle into bowls, then serve and enjoy!
