4cupsbeef brothlow sodium

2cupswater

1bay leaf

1tspItalian Seasoning

¼tspdried dill

15oztomatoesdiced, with juice

2tbspcornstarch

Preparation

Cook onion, butter, garlic, celery, and sausage in a soup pot until onion is tender for about 5 minutes.

Add potatoes, carrot, cabbage, broth, water, bay leaf, and seasonings. Simmer uncovered for 15 minutes or until potatoes are tender.

Stir in tomatoes with juices and cornstarch and simmer for 10 minutes more.

Discard bay leaf and season with salt and pepper to taste. Serve with sour cream if desired.
