Ingredients

1½lbschicken breasts,or tenders, skinless boneless

½cupwhole wheat flour,or all purpose flour, spoon and leveled

1tspsalt

½tspground black pepper

2large eggs

1½cupspretzels,finely crushed, or more, as needed

olive oil spray,or coconut oil spray

Preparation

Preheat the oven to 400 degrees F. Line a large baking sheet with a silicone baking mat or coat heavily with nonstick spray.

Cut the chicken 1 to 1½-inch pieces.

Combine the flour, salt, and pepper in a shallow dish. Beat eggs in another shallow dish. Pour the pretzels into a third shallow dish.

Coat each chicken piece in flour, shaking off any excess. Then, dip in the egg and let any excess drip off. Then, generously roll in the pretzels, shaking off any excess.

Place the chicken bites on the prepared baking sheet. Lightly spray each with nonstick spray to seal the breading.

Bake for 8 minutes. Turn each piece over and continue baking for about 6 to 8 minutes more until the outside is crisp and the centers are cooked through.

Serve chicken bites with toothpicks, honey mustard, or cheese sauce, and enjoy!
