Ingredients
2large eggs
1cupsugar
½cupvegetable oil
1cuppumpkin puree
1¼cupsflour
1tspcinnamon
1tspbaking powder
½tspbaking soda
¼tspsalt
½cupdried cranberries,chopped, divided
Preparation
Preheat the oven to 350 degrees F and spray an 8×8-inch baking pan with baking spray.
In a large mixing bowl, whisk together the eggs, sugar, oil, pumpkin and ⅓ cup of cranberries, until well combined.
In another bowl, sift together the flour, cinnamon, baking powder, baking soda and salt.
Add flour mixture to the pumpkin mixture, then whisk until just combined.
Pour the mixture into baking dish and spread evenly. Top with the remaining cranberries.
Bake for 25 to 30 minutes.
Cool completely before cutting and serving. Enjoy!
