Ingredients
½cuprolled oats
⅔cupmilk
¼cupbuttermilk
¼cuppumpkin pureecanned
1tbsplight-brown sugar
¼tspcinnamon
1pinchnutmeg
1pinchginger
1dashsalt
1tbspcaramel sauceor caramel ice cream topping
1tbspwalnutschopped, or pecans (optional)
Preparation
In a large microwave safe bowl, whisk together oats, milk, buttermilk, pumpkin puree, light-brown sugar, cinnamon, nutmeg, ginger and salt.
Microwave mixture on high power for 3½ minutes, then allow oatmeal to rest a few minutes.
Drizzle oatmeal with caramel sauce and sprinkle with optional chopped nuts. Serve warm.
