Ingredients
4 cups tomatoes, chopped
1 cup green onion stalks, sliced
½ cup parsley, fresh, chopped
¼ cup olive oil
1 tbsp lemon juice
1 tbsp Dijon mustard
¼ tsp garlic powder
¼ tsp sea salt
1 tsp parmesan cheese, shaved or grated, per serving
¼ cup croutons, (roughly 1 oz per serving)
Preparation
In a large bowl, combine the tomatoes, green onions, and parsley.
In another small bowl, whisk together the olive oil, lemon juice, mustard, garlic powder, and salt.
Drizzle the vinaigrette over the salad and toss to coat.
Let sit for 10 to 15 minutes before serving.
Garnish with croutons and parmesan cheese. Serve!
