Ingredients
1tbspolive oil
1small onion,chopped
½cupcelery,sliced
14½ozvegetable broth,(3 cans)
15ozwhole potatoes,(1 can), cubed
14½ozstewed tomatoes,(1 can)
½tspfresh thyme,chopped
salt and ground black pepper,to taste
16ozfrozen mixed vegetables,(1 pkg)
½cupinstant rice
Preparation
Heat olive oil in a Dutch oven or heavy stockpot over medium heat; cook and stir onion and celery for about 10 minutes until tender.
Add broth, potatoes, stewed tomatoes, thyme, salt, and pepper; bring to a boil. Mix vegetables and rice into broth mixture and simmer for 20 minutes.
Serve and enjoy.
