Ingredients

1ozred potatowashed and dried

olive oil

salt and freshly ground black pepper

2slicesbaconcooked crisp and drained

2ozColby Jack

2slicesfresh firm bread

Ranch dressing

1tbspbuttersoftened

1green oniondiced

Preparation

Preheat oven to 400 degrees F. Place red potato on a baking sheet and pierce potato several times with a fork.

Transfer baking sheet to the preheated oven and bake potato until tender for about 35 minutes. Remove from oven and allow rest until cool enough to slice. Slice potatoes into about 1/4-inch thick slices.

Butter outsides of two slices of bread. Spread ranch dressing along the opposite side of bread. Top one of the slices of bread with sliced red potatoes followed by bacon, cheese, and pepper to taste.

Sprinkle green onions over ranch covered side of the remaining slice of bread then top sandwich with that remaining slice.

Place in a 10-inch non-stick skillet, cover skillet, and heat over medium-low heat.

Cook for about 4 to 5 minutes until the bottom is golden then carefully rotate to the opposite side, cover, and cook until the bottom is golden.

Serve immediately.
