Ingredients
15½ozred velvet cake mix,(1 package)
½cupvegetable oil
2eggs,lightly beaten
2tsppeppermint extract
8ozcream cheese,(2 packages), at room temperature
½cupbutter,at room temperature
2tspvanilla extract
2cupspowdered sugar
Preparation
Preheat the oven to 350 degrees F.
Mix cake mix, oil, eggs, and peppermint extract together in a bowl.
Roll the dough into walnut-size balls and space about 2 inches apart on a cookie sheet.
Bake in the preheated oven for about 8 minutes until the tops of the cookies start to crack. Take out of the oven and let cool on the pan for about 5 minutes before moving to a cooling rack.
Beat cream cheese, butter, and vanilla extract together in a bowl with an electric mixer. Add powdered sugar a little at a time to reach desired consistency, or to sweeten to desired level.
Spread filling between 2 cooled cookies.
