Ingredients
1 lb dry pinto beans
½ cup bacon grease
½ cup Monterey Jack cheese, shredded
salt , to taste
Preparation
Sort beans, removing rocks.
Rinse thoroughly.
Put in a large cooking pot and cover with water.
Bring to a boil.
Lower heat; cover.
Simmer until done for approximately 3 hours, adding water as needed.
Beans should be covered with water at all times.
When done, drain all liquid except for ½ cup.
Transfer beans to skillet and mash.
Add bacon grease, cheese, and liquid.
Heat thoroughly.
