Ingredients

1cupall-purpose flour

½cupwhite sugar

1tspbaking powder

1pinchsalt

1egg

1tbspbutter,melted

½cupmilk

4cupsrhubarb,sliced

2cupswhite sugar

1½cupsboiling water

Preparation

Preheat an oven to 375 degrees F. Whisk the flour, sugar, baking powder, and salt in a mixing bowl; set aside. Grease a 9×13-inch baking dish.

Beat the egg, butter, and milk in a bowl until smooth. Stir in the flour mixture until moistened, then spread into the prepared baking dish.

Stir together the rhubarb, sugar, and water; pour into the baking dish.

Bake in the preheated oven for about 40 minutes until the dough has set and the rhubarb is bubbly.
