Ingredients
1 lb fresh asparagus, 12-14 medium-sized, trimmed and peeled
1 ½ tsp olive oil, preferably extra-virgin
1 tbsp balsamic vinegar
salt, to taste
pepper, to taste
Preparation
Preheat oven to 500 degrees F.
In a large shallow baking pan, toss the asparagus with oil and salt and pepper to taste until coated well.
Roast asparagus, shaking the pan every 2 minutes, for about 10 minutes or until tender and lightly browned.
Remove pan from the oven and drizzle vinegar over asparagus, shaking the pan to combine well.
