Ingredients

2lbsbutternut squash(peeled, seeded and cut into 3/4 inch cubes)

2½tbspsolive oil

2tbspsbrown sugar

2tbspsmaple syrup

Salt and pepper to taste

Cooking spray

1tbspchopped parsleyoptional

Preparation

Preheat the oven to 400 degrees F. Coat a sheet pan with cooking spray.

Arrange the squash cubes in a single layer on the pan.

In a small bowl, whisk together the olive oil, brown sugar, maple syrup, salt, and pepper.

Drizzle the olive oil mixture over the squash, then toss to coat evenly.

Bake for 25 to 30 minutes, stirring every 10 minutes, until squash is tender and browned.

Sprinkle with parsley if desired, then serve.
