Ingredients
2lbscarrots
3clovesgarlic,minced
½inchknob of ginger,minced
1tspsalt
2tbspcanola oil
1tbspolive oil
Preparation
Preheat oven to 375 degrees F.
Peel and cut carrots into ½ inch rounds.
Add the cloves of garlic and knob of ginger.
Add salt and toss with canola oil and olive oil.
Put carrots on a cookie sheet in a single layer and roast for 25 minutes, or until slightly browned.
