Ingredients
1lbItalian sausage,hot, or mild, casings removed
1onion,slivered
3clovesgarlic,minced
28oztomatoes,(1 can) diced
1cuptomatoes,(canned) crushed
1tbsptomato paste
3fresh tomatoes,diced
2red peppers,seeded, diced
1½tbspolive oil
½tspblack pepper
salt,to taste
1tspItalian seasoning
¼cupfresh parsley
2tbspfresh basil,or to taste
¼cupfresh parmesan cheese,shredded
12ozlinguine
Preparation
Preheat the oven to 450 degrees F.
In a large bowl, combine the red peppers, fresh tomatoes, olive oil, and Italian seasoning.
Place on a foil-lined pan and roast for 10 minutes, stir and roast for an additional 15 minutes or until the edges are slightly charred.
Combine the Italian sausage, onion, and garlic in a large pan. Cook until the sausage is cooked through.
Drain any fat.
Stir in the diced tomatoes (undrained), crushed tomatoes, and tomato paste. Let simmer uncovered for about 10 minutes or until slightly thickened.
Add in the roasted tomatoes and peppers, and parmesan cheese.
Remove from heat. Season with salt and pepper to taste, and cover.
Cook the linguine al dente, according to package directions. Drain, then toss with sauce and parsley.
Top with fresh basil and additional parmesan cheese, if desired.
