Ingredients
1tbspolive oil
1slicebacon,chopped
3clovesgarlic,chopped
1bunchcollard greens,washed and dried
salt,to taste
Preparation
Remove the tough stems that run down the center of the leaf.
Stack a few leaves, roll and slice into thin strips.
In a large saute pan, heat bacon on low heat.
When bacon fat melts, add oil and garlic, saute for about 1 minute until golden.
Add chopped collards to the pan, season with salt, to taste, and cover.
Cook for about 10 minutes until the leaves are tender, stirring occasionally.
Serve and enjoy.
