Ingredients

1cupwhite rice,uncooked

2cupswater

½cupfrozen green peas

1tbspbutter

2tbsponion,diced

⅛lbcrab meat

2ozgreen bell pepper,diced

⅙cupchicken broth

⅙cup1% milk

⅛cupfat-free Parmesan cheese,grated

Preparation

In a saucepan, bring water to a boil. Add rice and frozen peas then stir.

Reduce heat, then cover and simmer for 20 minutes.

In a medium skillet, melt butter and add the diced onion and minced garlic. Saute until onions are transparent.

Add crab to the mixture and saute briefly. Stir in bell peppers chicken broth, milk, and parmesan. Bring to a boil then turn off the heat.

Serve over rice when done, and enjoy!
