Ingredients
2½lbssweet potatoes,peeled (optional), diced into 1-inch cubes
3tbspolive oil,plus more for serving
4garlic cloves,minced
1½tbspfresh thyme leaves,chopped
salt and freshly ground black pepper
1½tbspfresh parsley leaves,chopped
⅓cupparmesan,finely grated
butter,melted, or more olive oil, optional
Preparation
Preheat the oven to 400 degrees F.
In a small mixing bowl, stir together olive oil, garlic, and thyme.
Place the potatoes in a mound on baking sheet, then pour the mixture over the potatoes. Season with salt and pepper to taste and toss to evenly coat. Spread into an even layer.
Roast in the preheated oven for about 30 minutes until tender, tossing once halfway through.
Remove from oven, drizzle and toss with more olive oil, then immediately sprinkle with parmesan.
Sprinkle with parsley and serve immediately. Enjoy!
