Ingredients
1corn tortilla
1egg,scrambled
dashmilk
¼cupcheese,shredded, like Monterey Jack, cheddar or mozzarella
Preparation
In a small bowl, scramble the egg with a dash of milk.
Heat an 8-inch cast-iron skillet or a small pan over medium heat. Butter the skillet or spray it with cooking spray.
Place the tortilla in the pan.
Let it warm up on one side, and then flip it.
Once both sides are hot, sprinkle cheese onto the tortilla.
When the cheese has melted, slowly pour the egg mixture onto the center of the tortilla.
Push the eggs around the perimeter of the pan. Scoot the set eggs to the center of the tortilla.
Flip the tortilla over, then cook for 20 seconds.
Flip it back onto the plate, add toppings if desired, serve, and enjoy!
