Ingredients
4chicken thighs,bone in, skin on
3tbspbalsamic vinegar
3tbspbrown sugar
2large sweet potatoes,peeled, chopped into 1-inch cubes
2tbspcanola oil
½tspkosher salt
¼tspcoarse ground black pepper
Preparation
Preheat the oven to 425 degrees F.
Season the chicken with salt, pepper, and balsamic vinegar. Rub it on well before adding the brown sugar to the chicken.
Add the oil, salt, and pepper to the sweet potatoes on the sheet pan, then carefully toss to combine.
Bake for 25 to 30 minutes until browned and cooked through.
