Ingredients
1½cupwheat bran
1cupbuttermilk
⅓cupoil vegetable
1large egg
½cuplight brown sugar
1tspvanilla extract
1cupall purpose flour
1tspground cinnamon
1tspbaking powder
1tspbaking soda
½tspsalt
Preparation
Preheat oven to 375 degrees F and spray a muffin tin with baking spray. Set aside.
In a small bowl, add the wheat bran and pour the buttermilk over, stir to combine, let this soak for 10 minutes.
In a large size bowl, combine the oil, egg, brown sugar and vanilla. Stir to combine.
In a medium size bowl, add the flour, cinnamon, baking soda, baking powder and salt. Stir with a fork or whisk.
Add the soaked wheat bran to the wet ingredients. Stir to combine. Slowly add the dry ingredients to the wet and mix together.
Scoop the batter into the prepared muffin tin, fill to ⅔ full.
Bake for 16 to 18 minutes until a toothpick inserted in the center comes out clean.
