Ingredients
6beets,fresh, or as many as desired
1tbspolive oil,about 1 tbsp for every 4 to 6 beets
salt and pepper,to taste
Preparation
Preheat the oven to 375 degrees F.
Wash the beets under cold water, then cut off the top and bottom.
Cut the beets in half, then toss them with olive oil, salt, and pepper in a bowl.
Lay out a large piece of tinfoil, then top with a piece of parchment paper
Wrap and seal the beets, or place the beets in a greased baking dish and cover.
Roast the foil package for 1 hour or until the beets are tender when poked with a fork.
Using rubber gloves or paper towels, rub the beets to let the skins slide off.
Serve warm with butter or chilled in salads, and enjoy!
