Ingredients

2tbspbutter

¼cuplight brown sugar,(scant), packed

1tbspwhisked egg,*

¼cupall-purpose flour

¼cupquick oats

⅛tspbaking soda

⅛tspcinnamon

1pinchsalt

2tbspraisins,or 3 tbsp of chocolate chips

1½tbsppecans,or walnuts, chopped small, optional

Preparation

Preheat the oven to 350 degrees F.

Place the butter in a medium microwave-safe mixing bowl. Heat in the microwave on high power until almost fully melted.

Add the brown sugar, 1 tablespoon egg, flour, oats, baking soda, cinnamon, and salt to the melted butter.

Stir until well blended. Add the raisins and nuts, and mix.

Shape the dough into a 3 ½-inch disk on a Silpat or parchment paper-lined baking sheet.

Bake in the oven for 13 to 15 minutes until the edges are golden but the center is still soft.

Cool slightly and enjoy!
