Ingredients

2½lbschicken pieces,cut up

3tbspolive oil

3tbspcurry powder

12ozchutney,(1 jar)

1red bell pepper,thinly sliced

1lime,cut into wedges

⅛cupgreen onion,chopped, for topping

¼cuppeanuts,chopped

Preparation

Rinse the chicken and pat dry.

In a large skillet, heat the oil until almost hot. Add the chicken, skin side down. Brown the chicken until lightly browned on both sides.

Add the curry powder, chutney, and red bell pepper. Simmer 30 minutes over medium-low heat.

Top the chicken with lime wedges, chopped scallions, and peanuts. Serve and enjoy!
