Ingredients

2tbspunsalted butter

1tbspvegetable oil

1½lbswhite potaoes,or yellow potatoes, small, 2 inches in diameter

Preparation

Salt and freshly ground pepper In a large skillet, melt the butter in the oil over moderate heat until sizzling.

Add the potatoes, cut side down, and cook for about 10 minutes over moderately low heat until golden brown on the bottom.

Turn and cook for about 10 more minutes, until golden brown on the other side and tender.

Season with salt and pepper and serve hot.
