Ingredients

4hard boiled eggs,peeled

4tspHellman’s light mayonnaise

½tspDijon mustard

2tbspgreen scallions,chopped, or chives

Salt and fresh pepper,to taste

4slicesWhole grain bread

Lettuce cups

Preparation

Separate the yolks from the egg whites; discard 3 of the yolks.

Chop eggs and combine with mayonnaise, dijon mustard, scallions, salt and pepper.

Serve on whole-grain bread or enjoy on lettuce cups.
