Ingredients
4lbsred potatoes,cleaned and rinsed, peeled or unpeeled, cut into 1½ inch pieces
½cupwater
1tspsalt,or to taste
½tsppepper,or to taste
1½tbspgarlic,(4 cloves), minced
¼cupbutter,melted
⅔cupsour cream
½cupcream,warmed in the microwave
½cupmilk,warmed in the microwave, or as desired
chives and butter,minced, for serving, optional
Preparation
Spray a 6 to 7-quart slow cooker with non-stick spray. Place potatoes in the slow cooker then pour water evenly over top.
Toss with salt and pepper then add garlic and pour butter evenly over potatoes and garlic. Cover and cook on High heat for 4 to 4½ hours, or until potatoes are tender when pierced with a fork (don’t drain!).
Mash potatoes with a potato masher then add sour cream and heavy cream.
Whip with an electric hand mixer until the desired texture is reached while adding in milk to reach desired consistency.
Serve warm with more butter and minced chives if desired.
