Ingredients
7ozchipotle peppers in adobo sauce,(1 can)
1cuplime juice
2tbsphoney
2tbspdried cilantro
2tbsponion powder
1tbspgarlic powder
3tspchili powder
2tspground black pepper
1tspcayenne pepper
1tspsalt
6chicken breasts,skinless boneless, or more to taste
Preparation
Combine the chipotle peppers, adobo sauce, lime juice, honey, cilantro, onion powder, garlic powder, chili powder, black pepper, cayenne, and salt in a blender or food processor and puree, making sure the chipotle chiles are chopped very fine.
Place a layer of chicken in a slow cooker, then cover with about ½ of the liquid mixture.
Add in the remaining chicken, then pour the remaining liquid over top.
Cover and cook on Low for 6 hours or on High for 3 hours, until the chicken is no longer pink in the center and juices run clear.
Turn off the heat, then let rest for at least 15 minutes.
Serve warm, and enjoy!
