Ingredients

2lbschicken thighs,(8 thighs), boneless, skinless

4medium carrots,cut into 1-inch pieces

1medium yellow onion,chopped

⅓cupdried prunes,halved

½cupgreen olives,pitted

3garlic cloves,chopped

2tbspall-purpose flour,or all-purpose gluten-free flour

2tsppaprika

2tspground cumin

1tspground cinnamon

2tspfresh ginger,minced

1cupchicken broth,low-sodium

1tspkosher salt

freshly ground black pepper,to taste

fresh cilantro,chopped, for serving

nuts,for serving, optional

lemon wedges,for serving

Preparation

In a 4- to 6-quart slow cooker, combine the chicken, carrots, onion, prunes, olives, garlic, flour, paprika, cumin, cinnamon, ginger, chicken broth, salt, and pepper. Stir to combine.

Cover and cook on Low for 6 hours.

Sprinkle with cilantro or nuts, and serve with lemon wedges. Enjoy!
