1.3lb93% lean ground turkey
1tbspextra virgin olive oil,light
1yellow onion,chopped
2garlic cloves,chopped
3tbsppoblano pepper,chopped
1cupcarrots,diced
1cupcelery,diced
28oztomatoes,(2 cans), petite diced
15ozchickpeas,(2 cans), drained
2cupschicken broth,low sodium, 99% fat free
2tspturmeric
2tsppaprika
1tspcoriander
2bay leaves
½tspred pepper flakes,crushed
2tspcoarse salt
2tbspfresh Italian parsley,or spearmint, chopped

Preparation
Spray a large nonstick skillet with cooking spray and over medium-high heat cook ground turkey for 10 to 12 minutes.
Break up the ground meat and mix so the meat cooks evenly, then place in the slow cooker.
To the skillet, add the olive oil, onions, pepper, carrots, and celery and sauté for about 8 minutes until soft. Add garlic and sauté for another 2 minutes.
Transfer to slow cooker along with diced tomatoes, chickpeas, spices, broth and gently mix well.
Cover and cook on Low for 6 to 8 hours.
Remove the bay leaves and serve; garnish with fresh herbs. Enjoy!
