Ingredients

½tspkosher salt

¼tspblack pepper

½juice of lime

1½tspsazon seasoning

29ozgandulesor pigeon peas

1onionsmall, chopped

4clovesgarliccrushed

1cupred pepperdiced

1tbspdiced jalapeno

½cuptomato sauce

2tbspoliveswith brine

1potatopeeled and diced, about 1½ cups

1carrotdiced

1celerydiced

2cupsgreensescaroles, chopped kale or baby spinach

1cupwater

Preparation

Marinate the pork with oil, oregano, cumin, salt, pepper, lime juice and sazon.

Refrigerate overnight for best results.

Transfer to the slow cooker along with the remaining ingredients.

Cover and cook 4 hours on High or 8 hours on Low.
