Ingredients

1large onion,(or 2 small) diced

2cupscooked turkey,or leftover, or 1 lb ground turkey

1green bell pepper,diced

1jalapeno,seeded, finely diced

19ozgreat northern beans,or white kidney beans

½red bell pepper,diced

2cansgreen chilis,(4 oz each) chopped

1cupcorn,frozen, or canned

1cupzucchini,finely diced

2cupsturkey,or chicken broth, reduced sodium

3clovesgarlic

2tbspFajita seasoning

2tspchili powder

1tspcumin

½tsporegano

salt and pepper,to taste

3tbspcilantro,chopped

⅔cupsour cream

Preparation

If using raw ground turkey, cook with onion until no pink remains. Drain any juices.

Add the onions, remaining chili ingredients, and seasonings to a 6-quart slow cooker.

Cook on Low for 8 hours or on High for 4 to 5 hours.

Once cooked, mash the chili mixture a few times with a potato masher to thicken slightly.

Top with cilantro and sour cream.

Serve with favorite toppings.
