Ingredients

14ozButterball® Smoked Turkey Dinner Sausage,halved lengthwise, cut into ¼-inch thick slices

1cupgreen onions,white and green parts, diced

1½tbspolive oil

10large eggs,slightly beaten

¾cupmozzarella cheese,shredded

⅓cupfreshly Parmesan cheese,grated

16fresh basil leaves,torn

¼cupsun-dried tomatoes,chopped

¼tspground black pepper

pinchparmesan cheese,freshly grated

1fresh basil leaf

Preparation

Preheat the oven to 350 degrees F.

Cook and stir the sausage and onions in oil in heavy oven-proof 10-inch skillet on medium heat for 5 minutes or until light golden brown.

Combine the remaining ingredients in a medium bowl. Stir the egg mixture into the skillet mixture.

Cook on medium heat, lifting with a rubber spatula once or twice to allow uncooked portion to flow underneath. Cook for about 6 minutes or just until the egg mixture begins to set.

Place the skillet in the oven. Bake for 5 to 7 minutes or until egg mixture is firm to the touch and top is golden brown.

Remove the skillet from the oven. Carefully run a spatula around the edge of the frittata to loosen from the skillet.

Invert skillet onto a serving platter. Cut frittata into quarters.

Garnish each portion with Parmesan cheese and basil, if desired. Enjoy!
