Ingredients
4flour tortillas,(12 inch)
125gramsmonterey jack cheese,smoked
1tbspjalapeno pepper,chopped
125gramsprosciutto
2cupsarugula
2tbspolive oil
¼cupmayonnaise
¼cupspicy tomato salsa
Preparation
Lay tortillas on counter and divide cheese, jalapeno, prosciutto and arugula evenly between them. Fold tortillas in half over filling and press down.
Heat oil in a large skillet over medium heat. Add tortillas one at a time and press down. Cover and fry about 2 minutes a side or until cheese is melted and tortillas are golden. Cut into four rectangles.
Mix together mayonnaise and salsa and drizzle over tortillas or serve as a dip.
