Ingredients
12ozdry spaghetti
1largered bell pepper,sliced into thin strips then cut into 2 inch pieces
1largecucumber,peeled, seeded and sliced into thin strips then cut into 2 inch pieces
1cupmatchstick carrots
¾cupgreen onions,chopped
½cupcilantro,chopped
½cuppeanuts,roasted, lightly salted, and roughly chopped
Sesame seeds,for garnish, optional
½cupcreamy peanut butter
¼cupwarm water
3tbspsoy sauce
2tbsphoney
2tbspsriracha,more or less to taste
2tbspfresh lime juice
1½tbspfresh ginger,peeled and minced
1tbspgarlic,minced
1tbspsesame oil
Preparation
Cook spaghetti according to directions listed on package. Meanwhile prepare peanut sauce by combining all sauce ingredients in a mixing bowl, whisking until well blended and smooth.
Drain pasta and pour into a large serving bowl. Toss with sauce then add bell pepper, cucumber, green onions, cilantro and peanuts and toss lightly.
Sprinkle with sesame seeds and serve.
