Ingredients
8cupsbaby spinach,or mixed greens
4ozchevre,crumbled
1cupwalnuts,or pecans, toasted
1pintfresh blackberries
½cupblackberry juice,strained
¼cupextra-virgin olive oil
2tbspbalsamic vinegar
½tspdried thyme
pinchsalt and pepper
Preparation
Toss together spinach, chevre, walnuts, and blackberries. Then drizzle with the blackberry balsamic vinaigrette. Serve.
Whisk together all ingredients until well-blended. Season with additional salt and pepper if needed.
