Ingredients

½cupred wine vinegar

½cupwhite sugar

1½tbspwater

1½tbspbutter

½tspsalt

1egg,beaten

10ozbaby spinach,(1 package)

6ozfresh mushrooms,(1 package), sliced

15ozmandarin oranges,(1 can), drained

⅓cupalmonds,toasted, slivered

4bacon slices,cooked, crumbled

¼red onion,sliced, separated into rings

¼cupcroutons,or as desired

Preparation

Mix the vinegar, sugar, water, butter, and salt together in a saucepan, then bring to a boil.

Cook and stir until the sugar dissolves and the mixture is bubbling. Remove from heat and cool to room temperature for about 1 hour.

Whisk the egg into the dressing, then return the saucepan to low heat and simmer for 5 to 10 minutes until the dressing thickens.

Combine the spinach, mushrooms, mandarin oranges, almonds, bacon, red onion rings, and croutons in a large bowl.

Pour the dressing over the salad. Toss to coat.

Serve and enjoy!
